Apple Preservation Workshop with Um Mami
As part of the Harvest Festival, Um Mami will host an apple-inspired preservation workshop in partnership with GDF celebrating Morocco’s seasonal autumn harvest. The session will explore preservation and fermentation as both traditional practices and a central part of Um Mami’s culinary identity – techniques used throughout our cooking to extend the life of seasonal produce, reduce waste and build depth of flavour.
Through a practical demonstration, participants will learn how to prepare a quick- pickled condiment alongside a fermented apple product (such as apple sauce), with pre-prepared examples available to taste. The workshop can introduce the essential
principles of safe fermentation, including salt ratios, storage, timing and signs of healthy fermentation, while showing how preserved apples can be used in everyday cooking.
Designed as an accessible and participatory morning session, the workshop will connect Morocco’s apple harvest with wider conversations around seasonality, biodiversity and responsible food practices – reflecting the shared values of Um Mami and Harvest (L’hasad)
The morning session will finish with a seasonal sharing-style lunch prepared fresh by the Um Mami team.
Tickets 495 MAD, bookable via Um Mami
